VINEYARD
Grapes selected manually from the family vineyards located in the municipality of Grávalos (La Rioja), south of Mount Yerga at an altitude of 800 metres above sea level. This height provides grapes with low alcohol content and good acidity which results in very fresh cavas with fine and elegant aromas.
The Chardonnay grape is harvested during the second and third weeks of September and the Viura during the first weeks of October. The collection of the grapes is done manually, selecting the grapes, preventing any deteriorated grapes from reaching the press or not complying with the quality required to elaborate our cavas.
ELABORACIÓN
Only the free-run juice, obtained after a mild pressing, will be destined for the elaboration of our cavas “Dioro Baco”. The first fermentation of the must takes place in stainless steel tanks at a low temperature around 14ºC.
At the beginning of spring, when the wine is cleaned by precipitation, the second fermentation is done inside the bottle, remaining there to age for at least 48 months.
TASTING NOTES
Light gold colour with greenish reflections.
Good effervescence with elegant flow of fine and persistent bubbles. Intense and fresh aroma with notes of fine wild herbs and ripe fruit. Fresh, fruity, elegant and with a fine nose.
FOOD MATCH
Cold and hot starters. Fish and seafood, foie gras, fresh and aged cheeses.
