Grapes selected manually from the family vineyards located in the municipality of Grávalos (La Rioja), south of Mount Yerga at an altitude of 800 metres above sea level. This height provides grapes with low alcohol content and good acidity which results in very fresh cavas with fine and elegant aromas.
ELABORATION
Only the free-run juice obtained from a gentle pressing is used to make Dioro Baco. The must goes through a first fermentation in American oak barrels where it remains with its lees and is bathed daily until mid-March when it is bottled to ferment a second time. Once the second fermentation is finished, the cava is aged for a minimum of 84 months.
TASTING NOTES
Yellow mantle with golden touches. Its fine bubble forms rosaries and a good crown.
Aromas of ripe fruit and hints of smoke, toast and vanilla from the barrel. Well constituted, powerful and tasty with a smooth finish and a point of acidity that makes it very pleasant.
Perfect for sharing special occasions.

Hot and cold starters, oysters, game, fresh foie gras. Could accompany during the whole meal.
