ELABORATION

The grapes from the Cuesta la Reina estate, a hillside facing the sun with poor soils where the family has been cultivating the vineyard for four generations. A place from which very fine and elegant wines are obtained, capable of expressing all the character of the land in which they are grown. After a meticulous monitoring of the vineyard, the grapes are harvested at the optimum moment of ripeness. Harvesting is done by hand, selecting the healthy and ripe grapes, rejecting the raw and deteriorated ones.
The fermentation is done in stainless steel tanks and with the indigenous yeast. Once the fermentation is finished, it is macerated for at least 10 days. The ageing is done in American oak barrels with an average age of 5 years and it remains in them for at least 24 months. During this time, six rackings are made. Once cleaned, the wine is bottled, remaining in the bottle rack before going on the market for at least 36 months.

TASTING NOTES

Brick red colour with a good covering. Clean, complex and with good intensity on the nose, aromas of red fruits well combined with those of ageing, balsamic, pepper, tobacco and leather. Good structure, tasty, wide, smooth but with character and a good harmony in its flavours. Complex and clean aftertaste.

Jamón serrano and Ibérico. Aged cheese, red meat, stews and game.
